Deer "Satay"

Postby Sailfish » Mon May 11, 2009 4:54 am

The wife made this the other night with beef, however yesterday I made it with deer.
It is really good.
1# deer steak/chops
3 tbl fresh juice of a lime
2 tbl reduces sodium soy sauce
1 tbl asian fish sauce
2 tsp dark brown sugar
2 garlic cloves (minced)
1/2 tsp curry powder
1/8 tsp crushed red pepper
cut meat into strips about 4" x 1"
Whisk the ingredients in a bowl, add the meat, mix again, cover and let set for 30 mins.
Put them on skewers (try to do it long-ways, and keep the meat flat) and grill away!!!

Sounds good to me. Not sure about the fish sauce tho. I grill a lot of my deer. I make up sauces as I go. some are good while others are well, not so good. But I don't toss my deer meat away. Some day I'll start writing the good mixes down.

I have made chicken satay and it's great.  Will have to try with venison.
I know fish sauce sounds disgusting, but it is not what you think. It does not smell like dead is very salty, though.  Thai cooking can take a bit of getting used to, but it really is unique in taste.

Great idea. I have to try it for sure. I also wanna also try deer chilli - like chilli con carne.
But for the time being my favourite type od deer dish is roast deer.
