Lookin for a sausage recipe

I have been wanting to make breakfast sausage out of vension and have yet to find a good recipe.  Would also like to get some recipes other than breakfast. Just looking to add some variety to my ground meat. Thanks!

I haven't tried it yet but I intend to shortly.

Sausage Recipes

These recipes can be used with pork, beef, venison, even turkey or other meats for making your own sausage.

Breakfast sausage:
10 pounds ground meat
2-3 pounds pork or beef fat (vegetable shortening or lard could be substituted)
6 teaspoons salt
4 teaspoons sage
4 teaspoons pepper
2 teaspoons sugar
2 teaspoons paprika
1 teaspoon celery seed
1/8 teaspoon ginger
1/8 teaspoon nutmeg

Combine ingredients, mix well, run through grinder again if necessary. Package in quart sized or sandwich bag sized zip-lock bags as desired, and freeze.

I used to try and make all my seasoning blends homemade but if something wasn't right, I was stuck with 5-10# of meat you had to choke down...LOL
I now get all my seasonings pre-mixed from www.sausagemaker.com To their seasoning mixes, you can still add additional ingredients to taste, like various ground/crushed pepper, garlic, etc... Their prices are decent and they carry delicious products.
