All the processing is done..what do you do......

With the left over carcass?.....We sell the hides to a local guy...and put the bones...ribcages and trimmings in big garbage cans and feed them to are dogs and cat and chickens over the winter as a suppliment to their food...legs hooves and heads are buried in woods

Hides go to the tannery, and everything else is picked clean of meat and the bones go in the garbage.

We generally will give the hearts and livers as well as the trimmings  bones and rib cages to the hounds (or in one case the cat) either right then or over the course of the year.  The hides, heads and other offal are taken to where we have select sites on our lease where we try to dump them and let the coyotes and other such dispose of.

The cats at the in-laws farm have gotten treated to some nice venison ribcage over the years.

I put the "leftovers" in a sink hole on my side property. Seems to disappear after awhile-lol.
