Anyone cooking backstraps today?

It's 19 degrees and overcast, but I can't wait for the weather. I got the grill heating up, taters and onions all sliced, and the backstraps are almost thawed.  Some Cajun injector, sliced about 1 1/2 wide and wrapped in bacon. Mmmm. They should be done by halftime! [:)]

We had bacon wrapped backstraps yesterday. Cant beat it.

Yup, venison tacos, venison spaghetti, venison lasagna, venison chili........ Geez, what can't you use venison with? Maybe icecream I guess.

...yeah. I don't think a venison smoothie would be too appetizing either.

Other than that, it's hard to go wrong.

Now how did you know what we were having for lunch today?
I sliced them about 1/8-3/16th thick when I took them out back when deboning them. She does them with a dry rub, Ol Bay seasoning sprinkled on, and run thru the frying pan in garlic butter. Nice and tender and tasty. Can't seem to get enough of them. I always gotta share a few with our Marley look and act alike.[;)]

Unfortunatly I did not tag a deer this year[:(][:(]. My brother in law( who got a seven point during shotgun season) brought me a "care package" last week. Although it was from last years deer I wont complain (after all, last years venison is better that no venison). I cooked up the sirloins the other day, the rest I'm makin jerkey with.

I like to bone my backstraps out, and then cut them into roasts about 10" to 12" long. Then I season them and cook them slow over the grill while feeding soaked hickory chips to the coals.
 
When it's medium rare, I take it off and then slice thin.....CAN'T BE BEAT!

thursday  was straps in garlic butter with mushrooms
 
Friday was chili with deer sausage
 
today is to be a venison roast soaked in red wine ....cooked with onions... carrots.... taters...mushrooms...garlic.....bayleaf
