My wife has a recipe for cooking the roast. The original is called "Italian Beef" but she uses deer roast and it is really good.
1 cup of water, 1tbsp of salt, 1tbsp of pepper, 1 tbsp of worcestershire sauce, 1 tbsp of garlic powder, 1 tbsp of dry mustard, and 1 medium size roast.
Combine all ingredients in a crock pot and cook for 7 hours, then shred the roast. Add 1 jar of pepperoncini and cook for 3 more hours. Place the shredded roast on split Italian loaves or on Kaiser rolls and eat like a sandwich.
This is the best way I have found to eat deer roast.
