the poll on the main page got me thinking about venison heart sandwiches, a staple at our deer camp. If you haven't tried venison heart you should, it's great!
We soak the heart in saltwater for 15 minutes to get the blood out, then boil it for a couple hours in a large pot with an onion, bay leaves, salt, pepper and whatever else is lying around. Let it cool, slice it super thin and put it on some w/w bread with mustard. mmmm. mmm.
