Veteran hunter and wild game chef Scott Leysath of California will take a break from waterfowl hunting this week to be the special guest on “Deer Talk Now.”
Leysath is in California filming an episode of his new television show, Dead Meat. The show highlights hunters and anglers who target unusual species including crows, coots, gar, opossum and other unpopular but edible species, and how Leysath or his guests prepare the fare for the table.
But on Wednesday, Leysath will take a break to call in from the field for the weekly episode of Deer Talk Now to discuss deer preparation and cooking tips. Hosted by Dan Schmidt and Brad Rucks of Deer & Deer Hunting, the one-hour live webcast features experts talking about deer, deer hunting, habitat management, tactics, gear and more. The show airs from 12-1 p.m. Central at DeerandDeerHunting.com. Deer Talk Now is presented by Mathews, Carbon Express and ICOtec.

Better known as The Sporting Chef, Leysath is a leading authority on the proper preparation of fish and game. He is the author of two “The Sporting Chef’s Wild Game Recipes” cookbooks, published prior to his most recent “Better Venison Cookbook.” He is cooking editor of Ducks Unlimited Magazine and writes for a number of other publications.
Leysath spent four years on HGTV’s “Home Grown Cooking with Paul James.” When not in front of the camera giving useful cooking tips or preparing dishes, he scripted and directed the show’s cooking segments. Leysath makes numerous appearances on outdoor television and radio programs nationwide. His inaugural show, “The Sporting Chef” won the Southeastern Outdoor Press Association’s Excellence in Craft Award for two consecutive years, and he has been the popular co-host of “HuntFishCook” with Donny McElvoy of Alabama.
